Homemade pasta sauce✨🍽️ Ingredients: ✨400g pasta ✨2 zucchine ✨5 tbsp of extra virgin olive oil ✨two cloves of garlic and one onion ✨2 tsp of pesto (optional) ✨150g fresh ricotta ✨20g grated parmigiano (and as much as you’d like on top of your plate) ✨3 tbsp of pasta water (when it's cooked) Steps: 1. Pan fry the sliced onion and crushed garlic in 2 tbsp of olive oil for 2-3’ and then add little cubes of zucchini with 3 tbsp of extra virgin olive oil, salt, pepper and Italian spices to your liking and cook for 12’ on medium heat 2. During this time, cook your pasta al dente 3. Turn off the heat, set 1/3 of the zucchini aside 4. Add the fresh ricotta and grated parmigiano cheese to the rest of your cooked zucchini, give it a good mix 5. Add it to a blender and mix until creamy 6. On the pan, pour your cooked pasta and 3 tbsp of pasta water, add your creamy sauce and mix it together on very low heat for 2-3’ 7.
