@thesourdoughmama: Sourdough Bagel Shaping with My Family 🥯🥰💗 Last weekend, we had Papa in town, so naturally, we had to make something special for the occasion. I’ve been making sourdough bagels for a few weeks and thought it would be nice to show how I shape them since it’s quite different from shaping a boule or batard. 😅 I start by dividing the dough into equal pieces as best I can. Then, I take each piece and pull an edge toward the center, rotating the dough until all edges are pulled in. Next, I stitch the bottom together and press down to seal all those little edges. I flip it over and push and pull it around the counter a bit to tighten it up. When it’s time to make the center, I use both thumbs to press into the dough until I puncture it. Then, I insert my pointer fingers and spin while stretching the dough.
