Day 1 of my Cozy Soup Series🤎🍂 Fall soup season is here and this is your sign to make this Creamy Tortellini Soup! It’s soooo good. I posted a recipe last year but I fixed some things and this time it’s much better!! This also only takes 30 minutes to make :) Ingredients: • 20 oz pack of tortellini • 4 tbsp butter • 1 pound mild or hot Italian sausage • 1 medium onion • 4 cloves garlic • 1 tbsp Italian seasoning • 1 tsp salt • 1/2 tsp pepper • 1/4 tsp chili flakes • 2 tbsp flour • 28 oz can crushed tomatoes • 6 cups chicken broth • 1 2/3 cup heavy cream • a few handfuls of kale • Parmesan for topping 1) Heat up your pot to medium heat, and add in your butter. Add in your sausage and break apart. 2) Once the sausage is almost fully cooked, add in your onion and garlic. Sauté for about 3 to 5 minutes. Add in the Italian seasoning, salt, pepper, chili flakes, tomato paste, and flour. Stir and let that cook for about 2 minutes. 3) Add in the crushed tomatoes and chicken broth. Stir and let come to a boil. Then turn the heat to a simmer and cover. Let that simmer for about 15 minutes. While that’s cooking, boil your tortellini in a separate pot according to the instructions on the back. 4) After the 15 minutes, add the tortellini, heavy cream, and kale or spinach to the pot. Let that simmer together for a few minutes. Taste test to see if it needs more salt.
