TRADITIONAL KEFTA KABOBS I shared my moms recipe for authentic Syrian hummus a few weeks ago and you guys have been asking for more Syrian recipes since! There wasn’t a single bbq growing up where kefta wasn’t on the menu so eating it is nostalgic and brings back so many family memories of summer evenings. This is a family recipe I’m so excited to share with you all, hope you enjoy! What you’ll need: 8 bamboo skewers 1 lb 80/20 ground beef (I always get my meat from my local butcher, @thebutcherandgrocer) 1/4 cup parsley, minced (~1/2 cup well-packed parsley, pre-minced) 1/4 cup yellow onion, minced (~1/3 of a large onion or 1/2 of a small onion, pre-minced) 1 tbsp tomato paste 1 tsp cumin 1 tsp paprika 1 tsp salt 1/2 tsp coriander 1/2 tsp black pepper 1/4 tsp ginger Directions: If using bamboo skewers, soak them in water for at least 30 minutes before using them on the grill, to prevent burning Add parsley to a food processor and pulse until finely chopped, remove and set aside
Add onion to a food processor and pulse until finely chopped then drain to release excess moisture Add all ingredients to a medium bowl and mix until evenly combined Form the kefta around your skewers, about 1 inch in thickness Prepare your grill by oiling the cooking grates and preheating to medium high heat Grill for 4-5 minutes per side, depending on your preferred level of doneness Serve with pita bread or rice and veggies Enjoy! #kefta #kabobs #arabicfood #mediterraneanfood #glutenfree #glutenfreearabic
