Clean the pernil with lime, vinegar, and water. • In a pilón, mash lots of garlic and Dominican oregano. In a bowl, mix the garlic and oregano with salt, black pepper, adobo, paprika, sofrito, and olive oil. • Rub this marinade all over the pernil, making sure to season inside the holes. Pat the skin dry and sprinkle with salt. • Let it marinate for 24 hours. Before baking, uncover the pernil, pat the skin dry again, and cover it with aluminum foil. Bake at 330°F for 3 hours, then remove the foil and bake at 450°F for 1 hour to crisp up the skin. • Serve with arroz con guandules, pastelón, avocado, and a delicious sauce to pour on top.
