Lemon cheesecake is my new fave summer dessert 💛 Recipe below👇🏼 Ingredients Cheesecake Base: * 260g digestives * 100g unsalted butter, melted Cheesecake Filling: * 600g full-fat cream cheese * 230g caster sugar * 3 large eggs * 190g shop-bought lemon curd * 3 tbsp of lemon juice Lemon Glaze: * 4 large egg yolks * 130g caster sugar * 1 tbsp lemon zest * 80mL fresh lemon juice (about 2-3 lemons) * 85g unsalted butter Mascarpone Topping: * 200g mascarpone * 100g double cream * 60g icing sugar Method 1. Preheat your oven to 180°C (350°F). 2. Crush the digestives into fine crumbs. Mix the crumbs with the melted butter. Press this mixture into the bottom of a tin and bake for 10 minutes. 4. In a large bowl, beat the cream cheese and sugar until smooth. Aod the eggs and combine. Finally, add the lemon curd and lemon juice and mix until everything is well combined. 5. Pour the filling over the baked biscuit base. Bake for 40 minutes, or until the top is browned and the cheesecake has risen. 6. Turn off the oven and let the cheesecake cool inside to prevent cracks. 8. In a double boiler, bring water to a boil, then reduce the heat to low. In the top part of the double boiler, whisk together the egg yolks, sugar, lemon zest, and lemon juice. Stir constantly, until the mixture thickens. 9. Remove from heat and stir in the butter until smooth. Then pour over the cooled cheesecake. 10. Refrigerate for at least 4 hours, or preferably overnight, to set completely. 11. In a bowl, beat the mascarpone, double cream, and icing sugar until soft peaks form. 12. Pipe the mascarpone topping over the lemon glaze on the cheesecake. Decorate with chopped lemons and mint.
