the ones you're harvesting is spoiled. you have to harvest before the sunrise. as you can see they are not turgid. that's why it's expensive. harvesting time is very little.

Yuu can also use the yellow part and even the purple petals. The stigma is most rich in flavour and colour but whole flower is edible and aromatic.
