@katie_cooks_717: Sausage & Gnocchi Soup Ingredients: * 1 Tbsp Avocado Oil * 17 oz Italian Sausage - Sliced Into Coins * 1 Medium Onion - Diced * 5 Cloves Garlic - Minced * 3 Tbsp Tomato Paste * 1/2 Cup Chopped Roasted Red Peppers * 4 Cups Chicken Broth * 1 Cup Heavy Cream * 1 lb Gnocchi * 2 Cups Baby Spinach * 1/2 tsp Kosher Salt * 1 tsp Black Pepper * 1/2 tsp Oregano * 1 tsp Basil * Pinch of Crushed Red Pepper * Romano Cheese Rind * Romano Cheese * Parsley Directions: 1. Add oil to Dutch Oven over Medium-High heat. Add in the sliced sausage & onion. Sauté for 5-6 minutes. 2. Lower heat to Medium & add in the garlic, tomato paste, roasted red peppers, crushed red pepper & seasoning. Cook for 2 minutes - until well combined. 3. Add in the chicken broth & cheese rind & simmer for 30 minutes. 4. Add in the gnocchi, heavy cream & spinach. Cook until the spinach has wilted & the gnocchi is cooked. 5.
