Here’s how I make a dinner for my partner 83 year old Mom and the rest of the family. When it comes to cooking dinner for the family, I have a few things to think about. My partner is elderly. Mom needs soft and low sodium food. And the rest of the family does not. So here’s how I make both parties happy I typically create a meal that is somewhat similar, but our elderly parent gets a soft low sodium version and then the rest of the family gets more texture, often a bit more spice and salt I found these no sodium fries at Whole Foods which elderly parent loves. My big secret for quickly being able to throw meals together all week long is that I ingredient prep earlier in the week. Instead of meals, I prep ingredients, kind of like a Restaurant style of food prep. This allows me to quickly quickly quickly and easily throw together meals all week long. I topped our elderly parents meal off with some of her no sodium fries. For the rest of the families meal, I made a loaded fry version. I air fried then no sodium fries. But then I also added some roasted sweet potato fries to the mix. I roasted the sweet potatoes earlier this week so I could easily add them to this meal. For the topping of the loaded fries, I sautéing onion. Then I added some red peppers to that. I also added some frozen corn, lentils, kale, and rotisserie chicken. Again, I wanted the meal to be indulgent, but also loaded with nutrients. I finished off the flavor with garlic powder, onion powder, smoked paprika, and cumin. And then I brought it all together by using a cheese sauce that I found at Whole Foods. And I thinned out the sauce with a little bit of low sodium chicken broth. This was so delicious! Cooking dinner for the family does not have to be overly complicated or take too much of your time. With a little planning and prepping at the beginning of the week it’s easy to quickly and easily throw together some meals.
