Beat the egg yolks with 15-20g of sugar until you get a light and frothy mixture. 2. Prepare the syrup: in a saucepan, combine the sugar and water, and bring the temperature to 121°C (use a kitchen thermometer for precision). 3. Pour the syrup slowly over the yolks while continuing to beat with an electric mixer until the mixture is cool. This process does not ensure complete pasteurization of the mixture, so we recommend using a double boiler. 4. Soften the mascarpone by removing the whey and gently incorporate it into the pâte à bombe, using a spatula or low-speed mixer. 5. The mascarpone cream is ready!
