@priscillamansour: Red Pesto Gnocchi Ingredients: - 150g sun-dried tomatoes - 100g pepper paste - 20g of basil - 70g of toasted almonds - 75g parm - 1 garlic clove - 1/4 lemon, juiced - Salt and pepper to taste - 25ml water - 50ml olive oil -Blend all ingredients in blender to create pesto -Boil gnocchi all-dente and save 1 cup of pasta water -Drizzle olive oil in a pan and sautée gnocchi's for 1-2 mins -Add in about 1 to 1.5 cups of sauce and the pasta water, cook until sauce is smooth.
