📌 Plantain Empanadas (Air Fryer & Oven Version) 🍌 Plantain Dough • 3 ripe plantains • 2–3 tbsp corn flour 🥩 Filling • 500g minced beef • 1 tbsp olive oil • 1 green onion, chopped • Bell peppers, chopped • Scotch bonnet, chopped • 3 cloves garlic, minced • 1 tbsp tomato paste • 1 tbsp iru (locust beans) • Fresh parsley, chopped • 1 tsp paprika • 1 tsp habanero powder • 1 tsp bouillon powder • Salt to taste • Splash of water • Cheese 🥑 Avocado Dip • 1 avocado • Juice of ½ lemon • 2 tbsp Greek yogurt • Fresh parsley • Splash of water 👨🏾‍🍳 Method 1. Boil plantains until soft, mash and mix with corn flour to form a dough. 2. Cook the filling ingredients until the beef is fully cooked and flavorful. 3. Roll out the plantain dough, add the filling and cheese, then seal. 4. Air Fryer: 400°F for 15 minutes. 5. Oven: 350°F for 40 minutes. 6. Blend all dip ingredients until smooth and creamy.
