Simple Potato Soup! Cozy, creamy, and easy to customize! 12 ounce package of bacon, Chopped 1 diced onion 1/4 cup all purpose flour 4 cups chicken stock Salt & pepper to taste 4 to 5 cups peeled & diced potatoes 1 & 1/2 cups of milk or cream Toppings: Cheese, Bacon, Sour cream In a large pot fry the bacon until crispy. Remove, drain, and add back in about 1/4 cup of the bacon fat (butter or oil can be swapped out for the bacon fat). Sautee diced onion until soft. Stir in 1/4 cup of all purpose flour to make a roux, cook for 2 to 3 minutes until lightly golden. Slowly whisk in 4 cups of chicken stock, stirring until smooth. Season to taste with salt & pepper for a classic baked potato flavor.
