SUNDAY MEAL PREP 🍽️ This weeks meal prep consists of Chocolate Chip Baked Oats & Sweet n Sour Chicken with Sticky Rice for lunch. Make sure to save this post for later 📌 Breakfast: •Chocolate Chip Baked Oats •345 kcals - 23g PRO, 46g CHO, 8g FAT Serves 2: -60g of oats -2 scoops of vanilla protein powder (I use @myprotein) -2 tsp of baking powder -100ml of almond milk -1 banana, mashed -30g of chocolate chips Method: 1. Divide the oats, vanilla and baking powder between two baking dishes. Mix these ingredients first, then add in the mashed banana, milk and chocolate chips (save some for the top). 2. Bake in the oven at 180°C  for 30 mins. 3. Serve with some yoghurt, spread of choice or enjoy on its own. Lunch: •Sweet n Sour Chicken with Sticky Rice •406 kcals - 37g PRO, 66g CHO, 2g FAT Serves 3: -300g of uncooked chicken breast -20g of cornflour -Salt/pepper -150g of uncooked sticky rice -2 cloves of garlic -1 red onion -2 red peppers -1 large carrot, julienned or thinly sliced -1 tsp of cornflour mixed with warm water Sweet n sour sauce: -120g of reduced sugar/salt ketchup -6 tbsp of light soy sauce -85ml of white rice vinegar -2 tbsp of sweetener -A few tbsp of water Method: 1. Rinse the rice and place in a pot of water with 150ml of water. Bring to a boil, then reduce the heat, cover and simmer for 10 mins. Let sit off the heat for another few minutes. 2. Coat the diced chicken breast in the cornflour and salt/pepper. Spray with oil and air fry for 20 mins until crispy. 3. Fry the minced garlic on a pan then add in the veg with a splash of water. Let this cook for 5 mins. 4. Mix the sauce ingredients together then add to the pan along with a few tablespoons of water. Bring to a boil then reduce the heat to simmer. 5. Add in the cooked chicken breast and mix.  6. Serve into 3 portions along with the rice.
