Interval sets are important to improve your swimming. Human beings are creatures of habits and generally try to optimise where they can, so does their body.  If you go to the pool 3 times a week and swim 2km without stoping that is great and all and in the beginning it will get you started but at some point you won‘t do any improvments anymore and trust me this is not only related to the technique or so. It is related to the fact that your body starts to optimise.  If lets say your first training is on Monday and you jump in and swim 2km straight after 600m you body realises; oh I did this already for 600m so I can reduce the effort and just do the nescessary and the training-effect deminishes.  Then you go for a second time on Wednesday and your body already realises after 300m; Oh, I did this already on Monday and for the last 300m today so I know exactly how much energy this needs and the training-effect deminishes already earlier.  And on Friday when you go for your 3rd swim your body will already realise after 200m that it can start optimising and saving energy.
