Dried the skins, tossed them in a fryer basket with diced bacon, and dropped it in the hot oil (yes, oil went everywhere!). They crisped up in just a few minutes. Tipped them into a cast-iron pan, sprinkled on cheese, and popped it in the oven for 5 minutes. Finished with tomato sauce and Kewpie mayo. Super tasty, super fast, and a great way to use up those leftover peels! 🍟🧀 Ingredients: • Leftover potato skins, dried • Olive oil or frying oil • 2 rashers of bacon, diced • Mozzarella cheese (or any melting cheese) • Tomato sauce • Kewpie mayo Recipe: 1. Heat the deep fryer to 180°C (350°F). 2. Dry the potato skins with a paper towel and add to a fryer basket with diced bacon. 3. Carefully lower into the hot oil and fry for 2-3 minutes or until crispy. 4. Remove from fryer, place skins and bacon in a cast-iron pan, and sprinkle with cheese. 5. Bake at 200°C (400°F) for 5 minutes or until cheese is melted. 6.
