This time it’s QUINOA CRUSTED CHICKEN STRIPS! 💕 Now I don’t claim to be a professional home cook who always gets things right 🙈🥲 So I’ll be the first to admit that I overcooked my quinoa (multi-tasking is the death of me) 🫠 If you follow the package instructions for your quinoa closely, you’ll get fluffy individual grains that will stick MUCH better to the chicken strips than mine. 👍 🌟 Follow @eatingwithkirby and join my channel (in bio) to get the recipe on all 15 DAYS of my Easy Healthy Recipes 🌟 ✨ RECIPE: • 1 large chicken breast, cup into strips • 1 tsp black pepper • 1 tsp salt • 1 cup quinoa • 1 tsp garlic powder • 1 tsp onion powder • 1 tsp chicken bouillon powder (I used @knorr No Salt Chicken Bouillon which gives me flavour but no sodium - not sponsored) • 1/4 cup glutinous rice flour (or any kind of GF flour if you want it to be gluten-free!) • 2 eggs, beaten • 6 lettuce leaves • 1-2 tomatoes, sliced • 1-2 tbsp grainy mustard (optional) • 1-2 tbsp mayo (optional) • 1-2 tbsp oil (for pan frying) Season your chicken strips with salt and pepper on both sides. Cook your quinoa according to package directions until fully cooked but do not overcook them (like me) or it’ll become mushy. Add garlic powder, onion powder, and chicken bouillon and combine well. Dip chicken strips into flour mixture, then egg mixture, then finally coat it generously with your cooked quinoa. In a hot skillet, add oil and pan fry the chicken strips until quinoa is crispy and golden brown. Transfer to air fryer and finish cooking for an additional 5 minutes. It’ll crisp up even more in the air fryer for a crunchy exterior.
