Ingredients: 2 tbsp vegan butter 1 medium onion, chopped 3 cloves garlic, minced 1 cup coconut cream 1 tbsp garlic and herb seasoning 1 tsp onion powder Himalayan salt, to taste 1 tsp Italian seasoning Juice of lemon (not alot) ½ cup sun-dried tomatoes (chopped or sliced) 1 cup vegan cheese (shredded) 1/2 Boursin Cheese 2 cups fresh spinach 12 oz fettuccine pasta (cooked) Instructions: 1. Pour in the coconut cream and season with garlic and herb seasoning, onion powder, Himalayan salt, and Italian seasoning. Stir well to combine. 4. Squeeze the juice of a lemon (dont overdue it) into the sauce and mix well. Allow the sauce to simmer, stirring occasionally, until the coconut flavor has mellowed out. 5. Once the sauce tastes balanced, add the sun-dried tomatoes, 1/2 bousin cheese, vegan cheese, and fresh spinach. Stir everything together and cover the pan with a lid to help the vegan cheese melt. 6. After the cheese has melted, stir everything well. Taste and adjust the seasoning by lightly adding more garlic, onion powder, Himalayan salt, and Italian seasoning if needed. 7. Serve the sauce over your fettuccine pasta or toss the pasta directly into the pan to coat it in the sauce before serving. 8.
