Whenever I feel ill or under the weather, I will always make this chicken soup. It’s loaded with immune-boosting ingredients! Perfect for when you need comfort and nutrition in a bowl. Ingredients: • 2 tbsp olive oil • 1 large onion, chopped • 1–2 bay leaves • 1 tbsp fresh ginger, grated • 1/2 cup pearl barley, rinsed • 2 medium carrots, chopped • mushrooms • 2 cloves garlic, minced • 1/2 tsp salt (or to taste) • 1/2 tsp pepper (or to taste) • 2 cups cooked chicken, shredded or drumsticks • 2 tbsp fresh rosemary, chopped • 1/4 cup fresh parsley, chopped • 1–2 medium potatoes, diced • 6 cups pork bone broth • Optional: roasted chickpeas Instructions: 1. Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add onion and sauté for 3–4 minutes. Add garlic, ginger, and bay leaves, cooking until fragrant. 2. Add Broth and Grains: Pour in pork broth, bring to a boil, then add pearl barley. Simmer for 10–12 minutes. 3. Add Vegetables : Add carrots, potatoes, mushrooms, salt, and pepper. Cook until veggies and barley are tender. 4. Add Chicken & Herbs: Stir in chicken, rosemary, and half the parsley. Simmer for 5 more minutes, remove bay leaves, and garnish with remaining parsley. 5.
