Turmeric honey under the microscope 🍯 I’ve had this jar in my pantry for years so microscopic crystals started to form! To be completely honest, when I saw the silky texture of the honey I was sure there wouldn’t be any crystals in it so I was SHOCKED and sooooo excited 🥰 As I often do, I used polarization to make those crystals pop up! I’ll put a video in my Instagram stories of the honey crystals without polarized light and how they react when I add the polarizing filters and the Petri dish for some colours. Honey is the sweet substance produced by bees and other social insects and derives from the sweet nectar of flowering plants. Around 6 to 11 species out of the 20 000 reported species of bees produce honey. After collecting nectar from flowers or honey dew from insects like aphids, bees carry the sugary liquid back to the colony where it will be processed by house bees and stored inside wax honeycombs. The honey will then be used to feed the colony! ☺️ Honey is composed of around 70% sugar and 20% water, the main sugars are fructose (40%) and glucose (30%). It’s safe to say that honey is supersaturated because its water contains more sugar than it can naturally hold. This characteristic makes honey a hostile environment for microbes but you can find some yeasts and bacteria here and there! Don’t you worry though, there aren’t enough of them to make you sick. Some people think that crystallized honey is spoiled but it’s not the case! Crystallization is a natural process and won’t make honey taste bad at all. Crystallization occurs when glucose separates from water due to its low solubility. Fructose is way more soluble in water so it will stay liquid while glucose will form little crystals when it separates from water.
