Just made a delicious Beef Stroganoff! Seared the beef, cooked the veggies, and made a rich, creamy sauce. Served it up with rigatoni and fresh parsley. Perfect comfort food! 🌿🍝 Ingredients: 	•	700g beef, cut into strips 	•	3 tbsp olive oil 	•	Salt and pepper to taste 	•	3 cloves garlic, chopped 	•	1 onion, finely diced 	•	300g mushrooms, halved 	•	1 bunch parsley, chopped 	•	100g butter 	•	100ml beer or wine 	•	2 tbsp plain flour 	•	400ml beef stock 	•	1 tbsp Dijon mustard 	•	400g sour cream 	•	1 tsp smoked paprika 	•	1 tbsp Worcestershire sauce 	•	1 tbsp dried thyme 	•	300g rigatoni Recipe: 	1.	In a bowl, mix 700g of beef with 3 tablespoons of olive oil, salt, pepper, and garlic. Set aside. 	2.	Finely dice the onion, halve the mushrooms, chop the garlic, and chop the parsley. 	3.	Sear the beef in batches in a hot pan until browned, then set aside. 	4.	In the same pan, add 100g of butter, the diced onion, garlic, and mushrooms. Cook until softened. 	5.	Deglaze the pan with beer or wine. 	6.	Add the beef back to the pan with its juices and 1 tablespoon of dried thyme. 	7.	Stir in 2 tablespoons of plain flour until well combined. 	8.	Pour in 400ml of beef stock, 1 tablespoon of Dijon mustard, and 400g of sour cream. Bring to a simmer. 	9.	Add 1 tablespoon of Worcestershire sauce, half of the chopped parsley, and 1 teaspoon of smoked paprika. Stir and set aside. 	10.	Cook rigatoni according to package instructions. 	11.
