ad I’m hosting friends for the weekend, come cook rosemary potato & caramelised leek pizzas using @Boursin Cheese Truffle cheese ♥️ this was so so delicious Ingredients for four: Boursin Truffle 150g Good potatoes (a red-skinned new potato one is great; keep on that nutritious skin please) Leeks Dough/Base(s) Olive oil Fresh rosemary Salt and pepper Rocket/arugula Chilli flakes, if liked Method: 1. Preheat the pizza oven to maximum temperature or standard oven as per your dough instructions - about 200C fan/220C/450F. Add the baking trays too, for a very crispy crust if you wish. 2. Boil your potatoes for 4 minutes. Once cooked, toss them with most of the chopped rosemary and 1 tbsp of the oil. Set aside. 3. Slice the leeks into thick coins. Heat the remaining oil and slowly sauté, adding salt and pepper & garlic, until soft and starting to colour. Add lemon too if necessary. 4. Sprinkle polenta over pizza peel or baking tray and stretch out pizza bases. We like them pretty thin. 5. Spread the Boursin Truffle over the pizza, leaving the edges free. Add on the rosemary potatoes and the soft leeks. Grind over some pepper and chilli flakes if required. 6. Cook in pizza oven for 3 minutes or around 15 minutes in the oven. 7. Remove from the oven and immediately drizzle the crust with extra olive oil if you wish. Sprinkle over more optional chilli flakes and rocket leaves.
