Turkish Lahmacun with a side of Smoky Babaghanouj made in my @Ninja Kitchen Australia Woodfire Outdoor Oven  Dough 1kg plain flour  1 sachet instant yeast (7gm)  2tbsp sugar  2tsp salt  Warm water (approx 2.5cups)  Whisk dry ingredients in a bowl  Slowly pour the warm water. Little by little, while continuing to mix with a spatula  Once it mostly comes together, tip contents on to a clean dry bench and keep working the dough adding more water as necessary until the dough comes together completely and isn’t dry but doesn’t stick to your hands anymore Keep kneading the dough until it’s very soft,  elastic and smooth Lightly coat with olive oil and place in a bowl. Cover bowl with plastic wrap and allow to rest and rise for an hour After an hour, remove plastic wrap, punch a few times and cut in to smaller portions Place the smaller balls on to a tray. Cover with plastic wrap and let them rest for 30min.  Turn on Ninja Woodfire Outdoor oven to pizza function and add Woodfire pellets on the side of the oven. Allow pizza stone to pre heat until function display says to add food Dust dry bench with flour and roll out each piece of dough thinly Top with meat mixture and bake in pizza oven till cooked and crispy Meat Ingredients  1kg raw mince meat (with about 20-25% fat)  4 ripe Roma tomatoes grated  4 baby capsicums (different colours if possible) finely chopped  2 single red chilli’s deseeded and finely chopped (optional)  4 garlic cloves crushed  2 brown onion (grated)  2tbsp light olive oil 1/4 bunch parsley finely chopped  2tsp dried oregano  2tsp smoked paprika  2tsp ground cumin  2tsp salt and pepper  1tbsp capsicum paste  1tbsp tomato paste  1/4 cup warm water  In a bowl, combine mince meat and add grated onion and tomato, diced baby capsicums and chillies. Mix well.
