pad thai (recipe below)! 🤤🌱🥢 *recipe adapted from hot thai kitchen blog ingredients: 2 cups cooked rice noodles 1/2 cup sliced green onions   1 shallot 3 cloves garlic 8 oz chopped tofu 1/4 cup shaved palm sugar 2 Tbsp fish sauce 1/4 cup water heaped 1/4 cup tamarind paste 1 tsp red pepper flakes 2 eggs handful bean sprouts 1 cup cooked shrimp roasted peanuts and lime wedges for topping vegetable oil for cooking 1. boil the rice noodles according to package directions (I like to take them out slightly al dente since they finish cooking in the sauce).  2. chop the green onion, shallot, garlic, tofu, and palm sugar. for the sauce, melt the palm sugar over medium-high heat until golden brown and bubbly. pour in the fish sauce, water, and tamarind paste. the sugar should harden at first when you add the liquids but it will quickly dissolve back into the sauce as you stir. once the sauce is homogenous, remove it from the heat and set aside.  3. sauté the tofu and shrimp in vegetable oil and set aside. in the same pan, pour in a splash of oil and sweat the shallot and garlic over medium-high heat. stir in the red pepper flakes and let them fry for 30 seconds. pour in the sauce and toss the noodles in the sauce.  4. push the noodles over to one side of the pan and add a little more oil to the other side. crack in the eggs and scramble them until they’re cooked. stir the eggs into the noodles and add the tofu, a handful of sliced green onions, and the bean sprouts.  5. top the pad thai with the cooked shrimp, roasted peanuts, the rest of the sliced green onions, and lime wedges. enjoy <3 #padthai #asianfood #thailand #cooking #Recipe #food #Foodie #foodtiktok #chef
