@erin.lim: taiwanese popcorn chicken 🐔 the crispiest popcorn chicken ever! it's super crunchy on the outside and juicy on the inside 🍗 the seasoning gives it a unique and addictive flavor you have to try 😁 recipe link: https://erinscozykitchen.com/recipe/taiwanese-popcorn-chicken/ Recipe: Ingredients For the Chicken Marinade: • 1 lb chicken thigh, diced into cubes • 1 tbsp soy sauce • 1 tbsp garlic, minced • 2 tsp grated ginger (or 1/4 tsp powdered ginger) • 1/4 tsp five-spice powder • 1/4 tsp chicken bouillon powder • 1 tbsp Shaoxing wine or rice wine vinegar • 1/2 tsp white pepper • 1 egg white For Coating and Frying: • Thai basil leaves • 2 cups coarse sweet potato starch • Oil, for frying Seasoning Mix: • 1/4 tsp five-spice powder • 1/4 tsp white pepper • 1/4 tsp salt • 1/2 - 1 tsp sugar Instructions 1. Marinate the Chicken: • In a bowl, combine diced chicken thigh with soy sauce, garlic, ginger, five-spice powder, chicken bouillon powder, Shaoxing wine (or rice wine vinegar), white pepper, and egg white. • Mix well, ensuring each piece of chicken is coated with the marinade. Cover and let marinate for at least 30 minutes in the refrigerator. 2. Prepare for Frying: • Place the sweet potato starch in a shallow dish. Take each marinated chicken piece and coat it thoroughly in the starch, pressing lightly to ensure an even coating. 3. First Fry: • Heat oil in a deep pot or fryer to 350°F (175°C). • Fry the chicken in batches for about 4 minutes or until golden brown. Remove and drain on a paper towel-lined plate. 4. Double Fry for Extra Crispiness: • After the initial fry, reheat the oil to the same temperature (350°F). Fry the chicken pieces a second time for an additional minute or so to enhance crispiness. • In the last 30 seconds, add Thai basil leaves directly into the oil. Be cautious, as the oil may splatter. Quickly cover the pot with a lid for safety. Once crispy, remove and drain. 5. Season and Serve: • While still hot, place the fried chicken in a large bowl and toss with the seasoning mix (five-spice powder, white pepper, salt, and sugar). Adjust seasoning to taste.
