Homemade Calamari 3/10  We decided we would try making our own calamari to better understand the craft and our proffession. This was not good at all, we severely underestimated the small but important complexities of  this dish and paid the price.  The calamari we cooked was abysmal compared to some of the delicacies we have tasted in the past. The main issue we faced is the choice of new zealand squid. Im sure it is usually high quality fresh, once frozen and transported to perth it certainly isnt. This lead ti a chewey rubbery mouthfeel and certainly played a role in the poor result.  The late and great Julius Caesar once said “ i came, I saw, I conquered” unlike julius caesar our attempt was fast and disappointing with far too much effort put in for the results. Our squid was also rubbery due to both cook time and cook temperature. Despite experimenting and varying both variables most the calamari cooked was average at best with very few stand out pieces. This lead to a  rubbery chewy feel making you chew till all batter and sauce flavour is gone and you are left with a fishy chewing gum… not ideal. Due to these two main factors and a variety of much less significance this calamari scored poirly in our ratings and will need great improvements to even be ranked anywhere significant.
