@mrs.maker.of.the.home: I remember when I first started baking sourdough, I was looking for everywhere on what to do with my starter when I actually succeeded at making it. I found so much information on the Internet about creating one, but not a ton of information on maintaining one. If you would like more information on maintaining a starter and maybe possibly even a series on it, please let me know. I’ll be happy to do that. I do prefer to maintain my starter on the counter, I think it makes for a much happier starter in the long run. I completely understand not everybody bakes enough to be able to do that. However, if you’re able to, that is the way to go. Make sure you’re feeding your starter every single day if you’re storing it on the counter. If you store it in the fridge, you can go even months without feeding it if you have a truly active starter.
