@simplelicious: Ingredients 2 tablespoons olive oil 2 cloves garlic, finely sliced 1/4 whole nutmeg, grated (or 1/2 teaspoon ground nutmeg) 280g (10 oz) bag of spinach 500g (18 oz) ricotta cheese 1/4 cup (25g or 1 oz) Parmesan cheese, grated 2 Puff pastry sheets Egg wash (1 egg beaten with a splash of milk) Sesame seeds (optional) Instructions Preheat the oven to 180ºC (350ºF). Heat the olive oil in a large pan over medium heat. Add the sliced garlic and cook until fragrant, about 1 minute. Add the spinach to the pan, cooking until wilted. Remove from heat and let it cool slightly. Squeeze any excess liquid from the spinach, then chop it finely. In a bowl, mix the ricotta, Parmesan, nutmeg, and chopped spinach. Season with salt and pepper to taste. Roll out the puff pastry sheets and cut in half Place spinach and ricotta mixture in the center of each pastry piece. Fold the pastry over and seal the edges with a fork. Brush the tops with egg and milk wash and sprinkle with sesame seeds, if using. Arrange on a lined baking tray and bake for 20-25 minutes, or until golden brown and puffed. Allow to cool slightly before serving.
