Two is better than one right? Let’s make cheesecake infused carrot cake bars. These delicious bars now only pack in a soft and fluffy carrot cake, but some delicious creamy cheesecake too! 📝Ingredients📝 ~Cheesecake Mixture~ ▪️16oz of cream cheese (softened) ▪️2 eggs ▪️1tsp vanilla extract ▪️1/2 cup sugar ~Carrot cake Mixture~ ▪️1 1/2cups of shredded carrots ▪️1 1/2tsp vanilla extract ▪️2 large eggs ▪️1/2cup sour cream ▪️1/2cup oil (I use vegetable oil) ▪️1/2tsp nutmeg ▪️1tsp ground cinnamon ▪️1/2tsp salt ▪️1/2tsp baking powder ▪️1 1/4cup flour ▪️3/4tsp baking soda ▪️1/2cup sugar ▪️1/2cup brown sugar 🍴Steps🍴 1️⃣Pre heat your oven to 350° Fahrenheit. 2️⃣In a bowl mix your cream cheese till smooth. Add in your 2 eggs, 1tsp of vanilla extract & 1/2 cup of sugar. mix till fully incorporated and place aside. 3️⃣For your carrot cake in 2 separate bowls, mix together all your wet ingredients in 1 bowl & all your dry ingredients in another. Once they’re both mixed you can combine them together, and gently fold your freshly shredded carrots in. This will prevent the carrots from just falling to the bottom. 4️⃣Layer in your carrot cake batter to a large well greased 9x13 inch baking sheet, followed by scoops of all your cheesecake mixture.
