Instructions: Prep the chicken: Pat the chicken dry and season both sides with salt and pepper. Sear the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken and sear for about 4-5 minutes per side, until golden brown and cooked to 165F degrees. Remove from the skillet and set aside. Sauté the mushrooms: In the same skillet, add butter and the mushrooms and cook for 3-4 minutes until they soften and release their juices. Add the garlic and shallot and sauté for another 30 seconds. Cook the Green Beans: On a separate medium heat pan, add in the vegetable oil and green beans. Simmer for ~8 minutes. Make the sauce: Pour in the white wine and scrape up any bits from the pan. Let the white wine cook off the alcohol for about 3-5 minutes. Stir in the heavy cream. Slowly pour in the grated Parmesan while stirring. Let simmer for 2-3 minutes until slightly thickened. Combine & simmer: Return the chicken to the skillet, coating it with the sauce. Spoon the sauce over the chicken.
