Strawberries & Cream Focaccia muffins in the Ooni Halo Pro Sprial Mixer. @Ooni Pizza Ovens  ad. I’ve been using the Halo Pro Spiral Mixer for a few months now…here are a few of the stand out features for me: •digital interface with precision speed settings and a timer  •removable breaker bar which helps to keep dough anchored and not climbing up the hook •a plastic cover which keeps dry ingredients from escaping the bowl and it has a handy spout for adding in liquid •dough hook, whisk and beater attachments for all my baking needs •a 5 kilo bowl capacity for dough/batter and 2000ml capacity for liquid!  •it even has a light 💡  How to make these: 🍓Mix up a batch of focaccia dough (recipe/tutorial pinned at the top of my page here) 🍓 Divide dough into 50g dough balls - one batch will yield 19 individual muffin sized focaccias.  🍓Place into buttered muffin tins to rise (covered) for about 1 hour.  🍓While the dough rises, finely dice a bunch of strawberries and mix with some sugar. Set aside so the strawberries can release their sugars to create a nice syrupy glaze on the berries.  🍓Whip up your favourite cream cheese frosting. My method is to whip the cream cheese, icing sugar and vanilla well for about two minutes and then drizzle in some cream and continue whipping at a high speed until thick and velvety.  🍓Dimple the focaccia muffins with melted butter and bake for 18-22 minutes (220F/430F) on the lowest rack. 🍓Brush the tops with butter and toss in superfine sugar. 🍓 Poke each muffin with a large straw to create a large cavity inside.
