@aflouryspace: My go to recipe for banana bread! - 3 ripe bananas - 55g unsalted butter, melted - 180g brown sugar - 2 large eggs - 45g coconut oil - 120g plain greek yogurt - 1 tsp vanilla extract - 100g sourdough discard - 265g all-purpose flour - 1 tsp salt - 1 tsp baking soda - 3/4 cup chocolate chips, or dried fruits/nuts of choice 1. Preheat the oven to 215 deg C. Line a 9 inch by 5 inch loaf pan with parchment paper or you can grease it with some butter. 2. In a large mixing bowl, mash bananas until smooth. It’s okay if you have still have small chunks, this adds some texture to the banana bread. 3. Mix in melted butter and brown sugar to the banana mixture. 4. Add in the eggs, coconut oil, yoghurt and sourdough discard. Whisk till smooth. 5. In a separate bowl, whisk flour, salt and baking soda until everything is well combined. Then add the dry mixture to the wet mixture. 6. Use a spatula to fold the batter. Once you don’t see any dry pockets, pour in the chocolate chips. 7. Pour the batter into the loaf pan. Bake at 215 deg C for 10 mins. Then lower the heat to 175 deg C and bake for another 45-55 mins until a skewer comes out clean. 8. Let the bread cool completely before slicing! Enjoy with some ice cream, yoghurt or on its own. :) PS: I only have a 8.5 by 4.5 inch loaf pan so it was at the verge of overflowing 😂 I had to pour away some batter.
