Add the lukewarm water. Knead for 10-12 minutes until smooth dough. Cover the dough and let it rise in a warm place for 1 hour or until doubled in size. Wash and chop the chicken breast. Add the salt, garlic powder, onion powder, cayenne pepper, cumin powder, black pepper, and olive oil. Mix well. Peel and chop the yellow onion. Mix the cornstarch with water in a deep bowl. Mix well. Heat the frying pan over medium heat and cook the chicken until done. Add the cornstarch mixture and cook for 2 minutes. Add the grated mozzarella, yellow onion, and cheddar cheese. Mix well. Cook for 1 minute or until the cheese is melted. Let the chicken mixture cool completely. Divide the dough into 28 pieces (25-26 grams each). Form balls. Flatten the balls slightly and spread the chicken mixture over them (25-30 grams). Repeat the process. Fold the dough inward slightly, see photo. Place the dough with chicken mixture on a baking sheet/oven dish/baking tray lined with parchment paper. They should be close together. Let rise for 30 minutes or until doubled in size. Place the filled chicken buns in a preheated oven at 200 ℃. Bake for 15-25 minutes or until golden brown. Garnish with your favorite sauce.   Tips: Add salt and pepper to taste. If you don't like spicy, you can omit the cayenne pepper and add black pepper to taste. Replace chicken breast with chicken thighs. You can also add pieces of vegetables.
