Recipe ⤵️ Anything but the turkey ep. 1: Red Wine Braised Roast 🥩🍷 Ingredients: - 4-5lbs chuck roast  - 3-4 celery ribs (rough chop) - 1 onion (rough chop) - 1-2 large carrots (rough chop) - 1/2 bottle of a dry cabernet  - 32 oz beef stock  - 3/4 c coke  - 3 tsp tomato paste  - 2-3 sprigs rosemary  - 2-3 thyme sprigs  - 2 heads of garlic  - 5-6 peppercorn  - olive oil  - 1/4 lemon (juiced) - 1/2 stick butter (cubed) Directions: 1. Cut your chuck roast into larger pieces about the size of short ribs. salt & pepper them on all sides. place on a rack. 2. In a large pot (i split my recipe between two pots so everything would fit) heat oil over medium high heat. Sear off your meat in batches. Remove them from the pots. 3. Preheat oven to 300F 4. Now add in your carrots, onions, and celery. Cook over medium heat, until til fragrant.  5. Add in your tomato paste cook for 3-4 mins. Deglaze with your coke & wine. Let that reduce for a couple mins. Reduce heat to med low.  6. Add your meat back in, and then top off with your broth. Add your rosemary, thyme, garlic, peppercorn, and a heavy pinch of salt. Bring to a simmer & cover.  7. Bake for 3-4hrs until meat is tender. 8. Remove meat once tender.  9. Strain out the liquid and reduce it in a pan until a thick sauce. Skim off excess fat on the top.  10. Slowly whisk in butter cubes of cold butter over low heat. Until a smooth silky liquid. Season w salt, pepper, and lemon juice to your liking.  11. Serve over a bed of mashed potatoes, garnish w some chives, and serve with sauce on the side so your guest can pour it for themselves.
