@cookingwithcarrrl: Taco Tater Tot Casserole . 1 lb ground beef 1/2 onion, diced 4 garlic cloves, smashed 8 oz roasted tomatoes 4 oz roasted hatch chilies 1/4 cup frozen corn 1 packet of taco seasoning 2 cups of cheddar or Colby jack 1/2 bag of tater tots, cooked half way 8 oz enchilada sauce . Brown ground beef in a skillet then add onion and garlic, cook for 5 minutes. Add tomatoes, chilies, corn, and taco seasoning the cook for 5 minutes. Top with cheese, par baked tater tots, and then the enchilada sauce. Bake at 400 degrees for 35 minutes or until the tots have crisped up.
