FAMILY FRIENDLY RECIPE! High protein red pepper chicken pasta 😍🌶️ Save this and try it this week! You can make loads of the sauce and have it as a dip with crackers or for your little ones to dunk crudités into! Ingredients (serves 2 - but with a bit portioned out for the babe!) 2 chicken breasts 150g dry rigatoni pasta 1 large red pepper 1 sweet red pepper A small red onion 2 garlic cloves 10ml olive oil Fresh parsley to garnish I didn’t season the sauce so that it was baby friendly but seasoned the hell out of it once it was on my plate 🤣 Roughly chop up your peppers and onion and add to a lined baking tray, add the garlic cloves with the skin on and either bake in the oven for 25 mins ish or pop in the air fryer for 10-15 minutes just to soften and go slightly brown Once they’re done, take the garlic out of the skin and blend the ingredients with the olive oil until smooth, this is your pasta sauce! Cook your pasta as per packet instructions and you can cook your chicken however you prefer (you can whack it in the oven with the peppers for ease or just pan fry!) Drain the pasta but preserve a bit of the pasta water in case you want to loosen the sauce but it should be a creamy texture already! Mix everything together and serve. Enjoy!!
