Caldo de Albóndigas con verduras- Mexican meatball soup with veggies👌perfect for winter weather.  Ingredients:  - 1 pound lean ground beef - 1⁄3 cup  uncooked rice, long grain - 4 roma tomatoes - 1 bunch cilantro, finely chopped - 1 small onion, chopped - 4 cloves garlic, minced - garlic powder to taste - lemon pepper powder to taste - salt and ground black pepper to taste - Chopped carrots - Chopped calabacita squash(mexican zuchinni) - Small Corn on the cob ( I add 2-3)  - 2-3 potatoes cubed - Chipotle to taste ( I added just one cause I have small kids but you can add up to 3 or to taste)  - Chicken bouillon or knorr powder to taste for the sauce and meatballs  - Olive oil -water Instructions: Meatballs:  In a large bowl, mix all if the ingredients for the albondigas. Wet your hands and form the meatballs For the sauce: Add 4 roma tomatoes in half,  add 1 chipotle with the other half onion, salt, knorr to the blender. Fill blender halfway full with water. Now blend until smooth For the broth: In a 5 quart pot add olive oil and after its heated up add your pure from the blender and heat until boiling, add your meatballs and allow them to cook in your broth for 25 minutes. While they are cooking you can chop your carrots and potatoes.  Now taste your broth add more spices or a can of tomato sauce if needed.
