Serves 6 mammoth muffins or 12 regular sized ones Ingredients: Cooking spray Muffins: Wet:1 14-15oz can of pumpkin puree  2 eggs  ½ tbsp Vanilla  1/2c granulated sugar 1/2c brown sugar  ¼ milk of preference (non dairy also works!) ¼ vegetable or canola oil Dry- 3c all purpose flour (plus 1/2c for topping) 2 ½ teaspoons baking powder  2 tsp Cinnamon, cardamom (or both) Freshly grated Nutmeg, just a tish A pinch of salt  Cream cheese mix and Crumbly Streusel top: 1 8oz block cream cheese 1 tsp Vanilla  1/2c Granulated sugar (divided) 1/2c Brown sugar  1/2c all purpose flour 6-8tbsp unsalted butter, cubed (best results when cold) Anddd some Butter for serving if you aren't using cream cheese Special equipment: Cupcake or muffin liners, a muffin or cupcake baking pan Set the oven to 350 degrees And line a cupcake or muffin pan with liners. Spray the outside of the circles with cooking spray so they can overflow if making mammoth muffins! To a large bowl add all the dry ingredients and whisk,to a medium bowl add all the wet ingredients into a bowl and whisk until cohesive, Add all of the dry into the wet and whisk until it's slightly sticky but showing no more flour remaining about 4-5 minutes. Evenly divide the batter into the muffin pan. I like mine to overflow, so I fill them all the way to the top, if you want to make normal sized muffins fill them about 60-70% of the way! An ice cream scoop works.. all too well! for this! To a small bowl, add the cream cheese, vanilla, and granulated sugar, beat or mix until smooth, set aside for assembly.  To a small bowl add the remaining flour and sugar, toss the butter with your hands rolling into little pea sized balls but dont think too much about it, its meant to be a teeny bit messy. (or use a fork if youre not into that) If using cream cheese, use a tsp measuring spoon to make a small little hole on top then top the crumbles on top of the batter,   For the best crumble, I like to bake my muffins for about 5-8 minutes, then add the crumble in a big pile on top (about 2 spoonfuls) (even on the cream cheese) its going to spread and become crispy and its like the best part of the muffin, because everybody knows.. The best part of the muffin is the top! Bake for 35-40 minutes for big muffins (sometimes longer depending how large you make them) and 20-25 for regular muffins. Use the tooth pick trick for larger cakes.. I mean muffins! Remove from the oven and let cool in the pan. then store in a airtight container for about 4-5 days if they arent shoveled into your face sooner, but lets be honest they are going to be gone lickity splity.
