@itsbreellis: This year I challenged myself to can all my tomatoes as they came in! I was able to do that minus a 3-4 week stretch where I had smaller quantities after the plants started to slow down. Thats where freezing comes in handy, especially if you just plan to make some sauce with it! I like to wash my tomatoes well and core them before freezing them. Everything I’ve read has stated it’s not recommended to can tomatoes that froze on the vine but it’s completely safe to use frozen tomatoes that were fully ripened that were harvested before frost hit them. It’s also said that if using frozen tomatoes it’s best to make something like sauce, juice, or crushed tomatoes vs canning them whole as the texture and consistency will change with being frozen. I’ve frozen my tomatoes for 4 years and done huge batches of sauce. I personally like how I approached canning this summer when it comes to my tomato harvest! Getting them done throughout the season was a lot of work but I think I prefer it vs doing a huge long batch day!
