I feel like I've cut my hair and just lost my mind tbh But for the z'aatar aubergine recipe... 1 large aubergine 1 tbsp oil 1 tbsp zatar 1/2 onion 3 cloves garlic 200g mince lamb / beef 1 large tomato (250g), grated 1/2 tsp all spice 1/2 ground cumin 1 tsp smoked paprika Small handful dill, finely chopped Small handful parsley, finely chopped 2 tbsp apple cider vinegar 4 tbsp olive oil Salt and pepper Slice the aubergine thickly not going all the way through. Generously drizzle with oil and salt and roast for 30 mins. In the last 5 mins sprinkle over the zatar Saute the onions in a glug of oil until softened. Add the mince meat and brown until very crispy. Add the garlic and spices. Toast for a few minutes then add the tomatoes. Cook for 10 mins until thickened and season with salt Service the aubergine on the spiced tomato sauce and then drizzle with the vinegary gremolata
