BALIWAG LECHON MANOK In 1985, Dwight and Dolores Salcedo saw an opportunity during the “lechon manok craze” sweeping the Philippines. With ₱5,000 of savings and another ₱5,000 from their parents, they decided to start a small business selling roasted chicken. At the time, they were running a Betamax rental shop in Project 8, Quezon City. When a small commercial space opened right in front of their shop, they thought, “Why not set up here and hit two birds with one stone?” They named their venture “Baliwag Lechon Manok” after Dolores’ hometown in Bulacan, which reminded Filipinos of the flavors of home and traditional Filipino food. Starting with lechon manok and grilled liempo paired with atchara, the Salcedos quickly gained customers who loved the authentic Filipino taste. Over time, Baliwag grew into a family legacy. Their daughter, Sara, grew up with the business, joining the team after college to help expand to food courts and stand-alone restaurants nationwide. Today, Baliwag has over 400 outlets and serves a variety of Filipino dishes, from lechon manok to ready-to-heat meals, making classic Filipino comfort food easily accessible.
