Roasted vegetables  Ingredients:  4 potatoes  2 tablespoons olive oil  1 red onion  3 carrots  2 sprigs of rosemary  1/2 tsp of paprika  Salt and pepper to taste  1/4 cup of white vinegar  Instructions:  Cut your potatoes lengthwise. Each potato makes six pieces.  Cut onions and carrots into thick chunky pieces. Once your vegetables are cut place them all in a bowl and add your olive oil and seasoning. Mix well.  Line your baking pan with parchment paper and add your vegetables. Place your potatoes facing upwards to create a crunchy bite. Preheat your oven to 375 degrees. Bake for 45 minutes.  Drizzle your favourite olive oil on top before you serve. Enjoy !
