MINI BROWN BUTTER LAVA CAKES Can you think of anything better? 🥹 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (makes 6 minis): Mini Brown Butter Lava Cakes: - 1 cup semi-sweet or dark chocolate chips @Ghirardelli Chocolate Company  - 1/2 cup salted butter - 1/2 cup powdered sugar  - 1/4 cup all-purpose flour @Bob’s Red Mill  - 1/8 tsp salt - 2 eggs, room temp - 2 egg yolks, room temp - Vanilla ice cream, for topping Easy Homemade Hot Fudge Sauce (Optional): - 1/4 cup salted butter - 2/3 cup semi-sweet chocolate chips @Nestle Toll House  - 8oz evaporated milk or half and half - 3/4 cup granulated sugar - 6 tbsp cocoa powder - 1/4 tsp salt - 2 tbsp vanilla extract Instructions: Preheat the oven to 425F. Grease a non-stick muffin pan with butter, and dust each muffin well with flour. Set aside. If using the hot fudge sauce, start by preparing that. In a small or medium saucepan over medium-low heat, melt the butter and chocolate chips, stirring frequently.  Once melted, slowly whisk in the evaporated milk until combined. Then, whisk in the sugar, cocoa powder, and salt.  Cook over medium heat for 5 minutes, until the mixture comes to a boil. Then, reduce the heat and simmer for another 2-3 minutes, stirring frequently.  Remove from the heat and stir in the vanilla.  Then, allow to cool and transfer it to a heat-safe jar. Store in the fridge for up to 3 weeks. Brown the butter for the lava cakes. Add the butter to a saucepan over medium-high heat. Allow to melt and slightly brown (~3-5 minutes), while stirring continuously. Remove from the heat and allow to slightly cool (2-3 minutes). Then, add in the chocolate chips and mix until the chocolate chips have fully melted into the butter and the mixture is smooth. Set aside. In a large bowl, whisk together the eggs and egg yolks. Add in the powdered sugar, flour, and slat. Whisk until well combined. Then as you continuously whisk, stream in the melted chocolate and butter mixture. Continue whisking until everything is combined and the batter is smooth. Spoon or scoop the batter into the prepared muffin wells, filling each 3/4 of the way full.  Bake at 425F for 8-9 minutes, until the edges are set and firm, but the center is still slightly jiggly. DO NOT OVERCOOK (these will go fast)! Remove from the oven and let stand for a few minutes in the pan. Then, run a knife along the edges of each lava cake, and quickly invert the pan onto a serving plate. Transfer to plates and serve immediately with a scoop of vanilla ice cream and a drizzle of the hot fudge sauce, if desired.
