Follow 👉 @bettercheatmeals if you want to hit your nutrition goals and eat the food you love. 👊 Made with 2.5 cup (600 ml) glass containers Serves: 4 🥜Ingredients Ingredients -1¾ lb (790 g) chicken breast (diced into small pieces) -olive oil cooking spray Satay Sauce -¾ cup (72 g) peanut butter powder -½ cup (118 ml) water -4½ tbsp (81 g) soy sauce -2-3 tbsp (36 g) sriracha (2 tbsp is a mild-medium heat) -3 tbsp (41 g) brown sugar replacement -1½ tbsp (23 g) lime juice -½ tsp garlic powder -1½ tbsp (9 g) curry powder -½ cup (125 g) plain, non-fat Greek yogurt -½ tsp powdered ginger Coconut Rice -4 cups (370 g) rice (jasmine or basmati cooked rice, about 1.5/260g uncooked) -½ can (200 ml) light coconut milk -1¼ cup (235 ml) water -½ tsp salt 👨‍🍳 Instructions -Rinse rice until water runs clear then cook rice with coconut milk, water, and salt. -Dice the chicken into small pieces -In a small bowl, mix powdered peanut butter with water until smooth and thick -Add all other satay sauce ingredients, including sriracha -Reserve half for dipping sauce -Mix the chicken with ½ of the sauce. -Grill or pan-fry until cooked through -Serve or package into separate containers #mealprep #weightloss #fatloss
