Refrigerate. 2. **Sauce:** Mix all sauce ingredients in a bowl. Set aside. 3. **Chicken:** Cut chicken breasts into bun-sized filets and pat dry. 4. **Dry Mixture:** Whisk together all dry mixture ingredients in a bowl. 5. **Wet Mixture:** Whisk together all wet mixture ingredients in another bowl. Add 3-4 tbsp of wet mixture to dry mixture for a flaky texture. 6. **Breading:** Dip chicken filets in dry, then wet, then back in dry mixture. Rest for 10-15 minutes. 7. **Frying:** Heat oil to 350°F. Fry chicken in batches until golden brown (7-8 minutes). Drain on paper towels. Reserve 3/4 cup frying oil. 8. **Spicy Oil:** Mix reserved frying oil with spicy oil ingredients. Dunk each filet in the spicy oil. 9. **Assembly:** Toast buns with butter. Assemble sandwiches with sauce, chicken, coleslaw, and pickles.
