I worked at Whole Foods and made hundreds of these. The whipped cream was made fresh, but the cream cheese/marscapone was this gelatinous paste that came in a bucket that got added at the end 😵💫

They actually do a berry syrup between layers, and the almond emulsion is in the frosting. Which is freshly made several times a week, depending on the store. Former bakery employee here
