Add grated garlic and cook for another 1-2 minutes until fragrant. 3. Pour in the red wine, scraping the bottom of the pot, and simmer until slightly reduced. Add tomato paste and stir for 1 minute. 4. Add passata, 3/4 jar of water, and cannellini beans with their liquid. Stir well, then season with salt, sugar, and black pepper. 5. Add shell pasta directly to the pot, stirring often to prevent sticking. Simmer until the pasta is al dente and the sauce thickens. 6. Taste and adjust seasoning. Stir in fresh parsley and serve hot, drizzling extra Pepperolio for added spice if desired. 7.
