Ingredients: 	•	220g rump cap steak 	•	1 tbsp beef tallow 	•	Salt and pepper to taste 	•	1 tbsp butter 	•	2 garlic cloves, smashed 	•	2-3 sprigs of fresh thyme Recipe: 	1.	Take the steak out of the fridge and let it come to room temperature. 	2.	Brush the rump cap with beef tallow and season well with salt and pepper. 	3.	Heat a cast iron pan over high heat until it’s very hot. 	4.	Place the steak in the pan and sear, turning every 30 seconds, for about six minutes. Place a weight on top while cooking to ensure an even crust. 	5.	Once the steak reaches an internal temperature of 50°C, remove it from the pan. 	6.	Add butter, garlic, and thyme to the pan. Let the butter melt, then baste the steak with the melted butter mixture for about 30 seconds on each side. 	7.	Remove the steak from the pan and let it rest for 10 minutes. 	8.
