Thanksgiving Sandwich 🦃🍁🍂Less than 1 week countdown to Thanksgiving…who is ready for some leftover sandwiches? For this one, I toasted a large homemade sandwich roll with herb butter, gravy, cranberry sauce, melted brie cheese, homemade stuffing and roasted turkey. Once it was out of the oven, I loaded it up with a shaved Brussels sprouts slaw, crispy bacon, crispy fried onions and a gravy drizzle 🦃🍂🍁 If you’d like to try the Brussels slaw to add a zesty little crunch to your leftover sandwiches, here’s how I made it: 2 cups shredded Brussels sprouts 1/4 cup dried cranberries 1/3 cup pomegranate seeds Pink pickled onions Dressing: 1.5 Tablespoons extra virgin olive oil 1 Tablespoon balsamic vinegar 1 teaspoon wholegrain mustard 1/2 teaspoon honey Flaky sea salt and pepper to taste Whisk the dressing together in a large bowl. Toss the sprouts, cranberries, pomegranate seeds and pink pickled onions in the dressing and let sit for at least 30 minutes for it to soften up before putting on sandwich.
