Curry Egg Pasta Salad A great one for summer or Christmas! You could sub the Greek yogurt out for a sour cream & mayo mix, I just prefer Greek yogurt in my dressings 😊 Ingredients: 6 x boiled eggs 1 x 500g pack pasta (I used spirals) 4-6 heaped tbspn greek yoghurt 1 x heaped tspn dijon mustard 1-2 tbspn curry powder (as per your taste) Salt & Pepper Veggies you like diced up: I used, red onion, cucumber, celery & tomato Method: Boil your eggs, cool & peel Cook your pasta as per instructions Drain pasta, run it under cold water Set aside in a bowl Seperate the egg whites from the yolks Roughly chop the egg whites, set aside In a bowl, mash egg yolks together Add your green yogurt, dijon & curry powder Add salt & pepper to taste Mix well, if you prefer it more of a runny dressing, add more Greek yoghurt, dijon & curry powder to taste Pour dressing over pasta, stir well to coat Add egg whites & veggies to the bowl Stir well to combine. Keep refrigerated Will keep for 3-4 days.
